  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  • Whisk together the flour, baking powder, baking soda, salt, and turmeric in a medium bowl.
  • Whisk together the eggs, vegetable oil, and brown sugar in a separate bowl until smooth. Stir in the pumpkin puree, scallions, and bok choy.
  • Add the dry ingredients to the wet ingredients and stir until just combined.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
