Saffron 101: Know Your Saffron Grades and Choose Wisely!

Saffron is obtained from the stigma of the crocus sativus plant and is the most expensive spice in the world. Despite having a very fragile form, saffron is the only spice capable of enriching the food with taste, aroma and color. The price of saffron is high due to the high production expenses as the former requires utmost care during handling. Although the spice costs more per unit than other commodities, its high concentration of active components makes it an inexpensive commodity. It only takes a tiny amount of saffron to impart the spice attributes to the food.

The grade classifications for saffron are based on ISO 3632 with 4 grades. The grades are Grade 1 (All red saffron), Grade 2 (Thread), Grade 3 (Tied bunch), and Grade 4 (Bunch).

Saffron Grades

1. Grade 1 or A+ or All Red (Sargol or Negin or Mongra):

All red saffron that contains stigmas only. This grade of Saffron is the best out of all the grades. This is also known as Super-Negin or Sargol Saffron or Mongra Saffron. It is the top part of the Saffron filament. It is highly priced due to its potent color & aroma. This part of saffron has been said to be the purest and finest quality saffron.

2. Grade 2 or A or Thread (Pushal or Lacha):

Class A or Grade 2 Saffron contains the red stigmas and is connected to the end part of the style that is yellow/ white in color. This category of saffron is also costly and mostly used in daily cooking and available in most of the leading grocery stores nationwide.

3. Grade 3 or B or Tied bunch (Dasteh or Zarda):

Contains the red stigmas connected to the entire style. This is typically low cost and low quality and available in all major local grocery stores. The overall weight of the thread contains more floral matter (Style). Its typical use is in perfumes (attars), fragrances, incense, aromatics and other pharmaceutical and cosmetic products.

4. Grade 4 orΒ Bunch:Β 

They are complete stigmas in bundles. There is also a flavor integrated into the white parts. Compared to other saffron grades, this is the cheapest.
