  • Soak the cashews in water for 2 hours, then drain.
  • In a food processor, pulse the soaked cashews until they form a fine meal.
  • In a shallow dish, mix together the cashew meal, breadcrumbs, flour, garlic powder, basil, salt, and pepper.
  • In another shallow dish, beat the eggs.
  • Divide the mozzarella cheese into 8 equal portions.
  • Take one portion of the cheese and form it into a patty.
