Saffron creme brulee

Creme Brûlée is a fusion French dessert with a rich, creamy custard flavoured with saffron and a layer of caramelised sugar. The custard is made with a mixture of heavy cream, milk, egg yolks, sugar, and saffron threads, which impart a warm, earthy flavour and a beautiful yellow colour. The custard is baked in ramekins in a water bath, then chilled in the refrigerator until set. Just before serving, a layer of granulated sugar is sprinkled over the top of each custard and caramelised with a kitchen torch to create a crispy, crackly topping. The result is a decadent and luxurious dessert perfect for special occasions.

  • Preheat your oven to 300°F (150°C).
  • Combine the heavy cream, whole milk, sugar, salt, and saffron in a medium saucepan. Heat over medium heat, occasionally stirring, until the mixture simmers.
  • In a separate bowl, whisk together the egg yolks and vanilla extract.
  • Slowly pour the hot cream mixture into the bowl with the egg yolks, constantly whisking to avoid scrambling the eggs.
  • Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl.
  • Place six 4-ounce ramekins in a baking dish or roasting pan. Divide the custard mixture evenly between the ramekins.
  • Carefully pour hot water into the baking dish around the ramekins, being careful not to get any water inside the ramekins. The water should come up about halfway up the sides of the ramekins.
  • Bake the custards in the water bath for 30 to 35 minutes or until the edges are set, and the centers are slightly jiggly.
  • Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, cover with plastic wrap and refrigerate for at least 2 hours or until thoroughly chilled.
  • When ready to serve, sprinkle a thin layer of granulated sugar over each custard. Use a kitchen torch to caramelize the sugar until it forms a golden brown crust.
  • Serve immediately, garnished with additional saffron threads if desired. Enjoy your delicious Saffron Creme Brûlée!
