Saffron Rice and Caramelised Lemon Tofu Stir-Fry

Ingredients

  • 300 gm tofu (firm to extra firm)
  • 1 tbsp soy sauce
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1/4 cup and 2 tsp cornstarch
  • 3 tbsp vegetable oil
  • 5 cloves finely minced garlic
  • 1 inch long finely chopped ginger
  • 1/4 cup water
  • 1/4 cup lemon juice
  • 1 tsp lemon zest
  • 1/4 cup sugar
  • 1 tbsp soy sauce
  • 1 1/2 cup jasmine rice
  • 1 fresh bay leaf
  • 1/2 cinnamon stick
  • 2 cardamoms
  • 2 cloves
  • 2 tsp whole cumin
  • 6-7 strands of saffron soaked in 2 tbsp warm milk
  • 2 tsp salt or as per taste
  • 1 thin strand of mace
  • 3 tbsp ghee

Directions

Instructions Checklist
  • Cut the tofu into cubes of desirable size.
  • Drizzle soy sauce, cornstarch, salt, and pepper onto the tofu cubes and give a gentle massage.
  • In a pan, heat up the oil and cook the tofu until golden and crisp. Remove the cubes from the pan and set aside.
  • Add more oil and add minced garlic, ginger soy sauce, lemon juice, lemon zest, and sugar. Cook for 2 minutes on medium-low heat.
  • Combine the sauce with tofu and mix for about half a minute.
  • For rice, soak jasmine rice in water for about 15-29 minutes
  • Fry up all the spices, i.e., bay leaf, cloves, cumin, cinnamon, and mace in the ghee until aromatic.
  • Add the soaked rice.
  • Cover the rice with water. Ensure that the water covers about 1 inch of rice and add the soaked saffron.
  • Cook and serve with the sticky lemon tofu. Enjoy!!
