  • Preheat the oven to 375°F (190°C).
  • Mix the breadcrumbs with the vegetable broth in a large bowl and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté until translucent.
  • Add the chopped mushroom stems to the skillet and cook for about 5 minutes.
  • Add the mushroom stem mixture to the bowl with the breadcrumbs. Add the lemon juice, parsley, thyme, salt, and pepper, and mix everything.
  • Stuff each mushroom cap with the breadcrumb mixture and place them on a baking sheet.
  • Bake the stuffed mushrooms for about 20 minutes or until the mushrooms are tender and the tops are golden brown.
  • While the mushrooms are baking, prepare the cashew gravy. In a blender or food processor, blend the raw cashews, vegetable broth, minced garlic, nutritional yeast, onion powder, dried thyme, rosemary, salt, and pepper until smooth.
  • Heat the cashew gravy in a small saucepan over medium heat, occasionally stirring, until it thickens.
  • Drizzle the cashew gravy over the stuffed mushrooms and serve.
