  • Preheat the oven to 375ยฐF (190ยฐC).
  • In a large frying pan, heat some olive oil over medium heat. Add the chopped onion, and minced garlic, and sautรฉ until the onion is translucent.
  • Add the mixed vegetables to the pan and cook for a few minutes until they soften.
  • Add the turmeric, cumin, coriander, smoked paprika, and cinnamon powder to the pan, and stir to coat the vegetables. Cook for another 2-3 minutes.
  • Drain the cashews and add them to a blender with the vegetable broth. Blend until smooth.
  • Add the cashew mixture to the frying pan and stir until the vegetables are coated with the sauceโ€”season with salt and pepper to taste.
  • Transfer the mixture to a casserole dish and bake in the oven for 30-40 minutes, until the vegetables are tender and the top is golden brown.
