  • In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  • Add the cumin, smoked paprika, and saffron threads and cook for 1 minute, stirring constantly.
  • Add the black beans and quinoa to the skillet and stir until heated through—season with salt and pepper to taste.
  • Heat the tortillas in a dry skillet over medium heat until lightly browned and pliable.
